Yellow Curry with Chicken
(Kaeng Karee Kai)

Onion Thai Yellow Chilly

Shredded chicken cooked in a traditional yellow gravy of Thailand.

Serves: 4 
Cooking time (approx.):  minutes

4  cup(s) shredded chicken (kai)
2  onions cubed
2  new potatoes cooked and cubed
4  tablespoon(s) coconut milk
4  tablespoon(s) yellow curry paste (nam prik kaeng karee)
2  kaffir lime leaves (bai ma krut)
2  teaspoon(s) palm sugar
4  tablespoon(s) fish sauce (nam pla)
4  tablespoon(s) oil
salt to taste

  1. Heat the oil in a pan and briefly saute the onions. Add the yellow curry paste and saute for about 15  minutes.
  2. Stir in the rest of the ingredients except the fish sauce. Mix well. Cook on low level for about 5  minutes or till the chicken is tender.
    Season with fish sauce
    Serve hot with steamed rice (khao suay) or noodles (guay thiew).
