Clover Club

This popular classic is made with gin, lime juice, sugar syrup and egg white.

Serve In : Rocks Glass (8 - 10 fl oz) as shown above

3 fl oz (75 ml) gin
1 tablespoon(s) lime juice
½ teaspoon(s) sugar syrup
1 egg white(s)
1 wedge(s) of lime
ice cubes as required
grated lemon peel to garnish

Pour the gin, lime juice, sugar syrup and the egg white into a cocktail shaker with ice. Shake well.
Strain the mixture over ice cubes into rocks glass(es).
Place lime wedge(s) on the rim of the glass(es). Serve garnished with a sprinkling of grated lemon peel.

TIP:

To make sugar syrup, bring to boil on low heat in a small saucepan 3 tablespoons water and 3 tablespoons sugar stirring continuously so as to dissolve the sugar. Simmer for about a minute or two without stirring.
As a variation, substitute sugar syrup with grenadine to give Pink Clover Club.
