Serves: 4 Cooking time (approx.): minutes Style: Continental Vegetarian 1 medium cauliflower cut into florets 2 tablespoon(s) butter 4 tablespoons plain flour or cornflour 4 cups milk 4 tablespoons grated cheese 1 tablespoon(s) breadcrumbs salt and freshly ground black pepper to taste - Cook the cauliflower florets in boiling salted water for about 5 minutes or till tender but firm. Drain and keep aside.
- Melt the butter in a pan on very low heat so that it does not turn brown. Add the flour and mix well. Add the milk gradually whilst stirring well. Keep stirring and simmer for about 2 minute(s).
- Mix in the salt, pepper and most of the cheese reserving some cheese for sprinkling on top. Add the cooked cauliflower and coat well with the sauce. Mix the reserved cheese with the breadcrumbs and sprinkle on top. Dot with butter and bake in a preheated oven at 175oC / 350oF for about 3 minute(s) or till it is golden brown in color.
TIPS: - Vegetable Au Gratin can be prepared as above with zucchini, aubergines, potatoes, carrots and beans.
