Vegetarian Quick and Easy Cooking

2  cup(s) water
1  medium cabbage shredded
1  tablespoon(s) butter
1  tablespoon(s) plain flour
4  tablespoons milk
1  nutmeg grated
salt to taste

  1. Heat the water in a pan. Add the shredded cabbage. Cover and simmer on low heat for about 4  minutes or till the cabbage is cooked. Strain the cabbage and reserve the water.
  2. Melt the butter in a pan. Add the flour. Mix well and gently stir till well-blended. Keep stirring for about 2  minute(s) or till the raw smell of the flour has gone taking care not to let it brown. Pour the hot water in which the cabbage was cooked into the pan whilst mixing. Bring to a gentle boil and keep stirring on low heat briefly for about 2  minute(s) or till the sauce thickens. The sauce should not be too thick. Add the milk and mix well. Mix in the grated nutmeg and salt.
  3. Just before serving, heat the sauce, mix in the cooked cabbage and bring to a boil whilst stirring. Remove from heat.

    TIPS:

  • This dish tastes best when step 3 is done just before serving time. The first two steps can be completed in advance.

Serve hot immediately with: pot roast or meat loaf
