Almonds Carrot

Carrots (also called Gajar in India) grated and cooked with milk and sugar. The pudding is finished with a sprinkling of cardamom powder and garnished with almond slivers.

2  tablespoon(s) ghee (clarified butter)
4  cups grated carrot
½  cup(s) milk powder
2  tablespoon(s) condensed milk
2  tablespoons sugar
2  tablespoon(s) raisins
2  tablespoon(s) chopped nuts almonds and cahewnuts.
½  teaspoon(s) cardamom (elaichi) powder
2  tablespoon(s) fresh cream beaten well
almond slivers for garnishing

  1. Pour the melted clarified butter (ghee) in a microwave-safe large deep bowl. Mix in the grated carrot and microwave covered on high (100%) power for about 5  minutes.
  2. Mix in the rest of the ingredients except the fresh cream and microwave covered on high (100%) power for about 4  minutes.

    TIPS:

  • Condensed milk can be replaced with khoya if available.
  • The quantity of sugar can be increased or decreased as per taste.
  • Ghee may be readily available off the shelf in Indian stores. However, it is important that it be fresh stock.
  • When the microwave cooking time for a step exceeds 2 minutes, it is highly recommended the contents be checked and stirred at regular intervals to avoid burning of food.
  • Standing time is a very important step as it completes the microwave cooking process of a dish. Ideally, allow the dish to stand for about 5 minutes before serving.

Serve warm or chilled garnished with: fresh cream and almond slivers.
